In this context, would "desollada" mean skinned? or is there another term that would work better? "mauled"?

Disagree You're placing a condition on the use of word that simply cannot be. You can correctly say that "Her face appeared totally or partially skinned." But to claim that the woman was not skinned because from the neck down she still had her clothes on is... absurd!

No it doesn't. If you say someone was skinned, it means they had all or most of their skin removed. I don't think that is the case here, not least because she had her clothes on.
The second part of your reference says it means to cause serious injury.

@ philgoddard If her face was skinned then that means she had no skin and therefore, was "desollada". As for the rest of her body, I don't get it, we're not talking about the rest of her body...

I found the story elsewhere, and it said her face was skinned, not the whole of her body. It could mean that she had serious abrasions rather than that all the skin was systematically removed.

It's true that the original does not say "partially" but, thanks to the unusually graphic photo, we can see that her face was not totally skinned.

You could put:

The square brackets indicate added material.

I still prefer flayed, not skinned (and especially not peeled), but that's just a personal preference.
