Comment traduire "inconsistency" ici : "incompatibilité", "irrégularité"... ?
"incohérence" ne me semble pas adapté à ce contexte.

I think you are right; I wouldn't use 'incompatible', which would be the wrong meaning here.
I believe the idea is better conveyed by 'irrégularité' — the anvil diameter is not regular

I did think that (otherwise I doubt they'd have used 'inconsistency' in EN), but the context is a bit thin, so I wasn't too sure; but in any case, can one not have a lack of regularity between anvils?

oui, je pense qu'ici il s'agit de (petites) différences de diamètre. Et si vous dîtes, par exemple
avec ce système XXX des variations de diamètre ne posent plus problème
